Can I change the schema after I've started?

Yes. Add, rename or remove properties whenever. Records keep their values, and a new property stays empty until you backfill it or turn on AI auto-fill.

How is this different from HubSpot custom objects?

HubSpot keeps custom objects for paid tiers. Here they come on every plan, and every property type works on them: formula, rollup, grade and external included.

What can I take with me if I leave?
